Has anyone else had problems dialling in via an FXS port? I discovered that the levels were such that the VoIP box didn't hear the DTMF tones.

This got me thinking: I bet the box is built for a 300ohm network impedance [US spec.]; the UK network is 600ohm... Therefore the audio levels will be low.

I'll try to prove it later; I have an American-spec fone here somewhere.

Via the CLI interface there are commands to alter the volume levels.

See

set port 'port' txgain
and
set port 'port' rxgain

Yes, or via webpage. BUT, the point is, it's default is for a US system. Something to bear in mind, if anyone else has a problem interfacing with a UK system, and find their DTMF digits are ignored by the VoIP gateway.
